Stuffed Peppers

Soy Stuffed Peppers Recipe1 12 oz pkg. El Burrito SOYTACO
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon soy (vegetable) oil.
1 cup cooked rice
1 cup tomato sauce
1/4 cup walnuts
4 bell peppers
2 cups vegetable broth

Sauté onion and garlic in oil until tender.
Mix all ingredients except the peppers.
Cut top off peppers and remove seeds.
Stuff each pepper with the mixture.
Place peppers in a baking pan, pour vegetable
broth around the base of peppers.
Cover and bake for 30 minutes at 350º


Fry SOYRIZO, let stand to cool…

Fill platter with baked tortilla chips..
Sprinkle SOYRIZO generously over tortilla chips..
Cover all with VEGGIE SLICES™ Pepper Jack cheese
Put in Micro wave until cheese melts..
Best to serve warm.
